
National Dishes
Uzbek cuisine has a long history, and the process of preparing its main dishes is a true ritual, every element of which is precisely ordered.
In the north, people favour palov (pilaf), fried meat, and dishes made from dough. In the south, they prepare a great many elaborate dishes from rice and vegetables, as well as wonderful sweets. On the local dastarkhan (table), lamb, horse meat, vegetable-rich soups, dairy products, and bread hold an important place. The country's main beverage is tea.

Uzbek dishes are among the most diverse in Central Asia. The culinary traditions of the settled and nomadic peoples living in the region, accumulated over several centuries, are today embodied in a single collection of delicious dishes of Uzbek cuisine that is familiar to us all.
